mock chicken salad recipe

most of you probably know that i’m a vegetarian (right?). though i can’t really say that i miss anything, i will say that i love me some mock chicken salad!  it’s most often something enjoyed at whole foods, but i recently tried making it myself, and to my surprise- it was scrumptious!  here’s the recipe!

ingredients:

 
- 1 block of extra firm tofu

- 1 tbs olive oil

- 1/4 cup finely chopped onion

- 1/2 cup chopped celery

- 3 tbs of mayonnaise (or nayonaise)

- 1/2 tsp italian seasoning

- salt and pepper to taste

feel free to add any other ingredients your prefer in ‘chicken salad’ like grapes, walnuts or scallions.

directions:

 
place the tofu in an absorbent towel, top with a flat surface (like a cutting board or baking sheet) and weight it down for 5-10 minutes so that most of the water gets absorbed. then, tear the tofu into irregular, bite size pieces.  heat the oil in a pan over high heat and cook the tofu, stirring often, until lightly browned on all sides. this should take about 10-15 minutes.  once finished, place in a bowl and let completely cool- i like to either put it in the refrigerator for an hour, or the freezer for 15 minutes.

take the chilled tofu and mix in a bowl with the mayonaise, onion, celery, spices, salt and pepper.  eat right away or keep chilled until ready to serve.

for vegetarians and meat-eaters alike- this recipe is delicious! whether you eat it plain or make a sandwich out of it- you’ll be quickly wondering where it all went.

  • This sounds so good! I’m a vegetarian, too, and I can’t wait to try making it! I once tried adapting a regular chicken salad recipe with some faux chicken strips, but I think they were better suited to a hot dish and it was kind of a flop.
