happy friday, friends! today i am very excited because we are headed out on the biggest road trip we’ve ever embarked upon. the mister and i (and toaster) have packed up and are officially on the road!

this is a map of our adventure! first up on our trip we’re headed to new mexico for a camping trip, then to tuscon, az for some business. the hub will be coaching a cycling camp, while i’ll be enjoying the warmest weather of the year (don’t mind if i, do!)! next we’ll be going home to north carolina for about ten days before we return to colorado springs, just in time to turn around and head out to california for david to do some more coaching while i begin looking for our next place to homestead. the big move to california is just around the corner, i can’t believe it!

peanut butter granola
 
so if your head isn’t spinning you’ll remember that i mentioned we were going camping first? that’s where the granola comes in! i have (of course) been planning our camping meals, and was so excited when my dear friend heather sent over this delicious recipe for peanut butter granola. it is easy, cheap and super yummy.

ingredients:

- 2/3 cup honey
- 2/3 cup peanut butter
- 2/3 cup brown sugar
- 1 tbsp ground cinnamon
- 1/2 tsp salt
- 5 cups rolled oats (not the quick ones!)
- 1 cup almonds
- 3/4 cup sunflower seeds
- 1 cup raisins
- 1 cup dried cranberries

directions:

preheat oven to 325 degrees. mix honey, peanut butter and sugar in medium sauce pan.  simmer over medium-high heat and stir until well dissolved together. remove from the heat and stir in cinnamon and salt.  mix oats, almonds and sunflower seeds in a large bowl.  stir in warm mixture and toss to coat.  spread granola in a single layer and well-greased baking sheets. bake for 15 minutes, stir, and bake for another 15 minutes.  let cool completely, then stir in the cranberries and raisins. enjoy!
