nothing reminds me more intently of spring than waking up to the sounds of bird songs out my window. they started singing a few weeks ago and i have woke up with a smile on my face ever since! though i’m not sure exactly what the ones out my window are, i do know that they sing the most beautiful of songs. are the birds singing where you live?

happy friday, lovelies! we’ve been traveling a lot lately, so dinners have had to be quick, wholesome and hearty. the veggies that are ready for pickin’ here in north carolina are a little different than what i’m used to in california, so i’ve adjusted a few of the recipes to accommodate the local veggies. all of these recipes make ‘throwing’ in whatever is in season easy!

monday: black rice stir fry served with a carrot and avocado salad
tuesday: lentil and bulgur soup
wednesday: roasted tomato, basil and onion pesto pizza (used a gluten free crust!)
thursday: vegetable rataouille
friday: bow ties with broccoli pesto served with a salad topped with nuts, fruit and avocado

we follow a whole foods, plant based diet. the dinner ideas posts are a way for me to log our dinners, how we make eating this way easy, and hopefully inspire you to try some new things as well. they are always meat free, dairy free and often gluten free. you can follow the posts here, and i encourage you to share your favorite recipes with us as well!
