happy friday, y’all! this week we got our very first csa box of the year -yaaahooooo! inside we found: snap peas, fava beans, cabbage, collard greens, strawberries, spinach, parsley, leeks, lettuce and broccoli. so that, my dears, are what you’ll find in this weeks recipes! hint: that’s probably what’s in season near you as well, so be looking for these items at your store or farmers market- they’ll have traveled less distance to get to you!

monday: husband’s healing stew (to help mend his collarbone!)
tuesday:  grilled veggie kabobs and a big ‘ol salad
wednesday: asparagus, snap pea and avocado pasta (leave off the parm!)
thursday: spinach spanakopita (our favorite this week!)
friday: orzo and snap pea salad with grilled fava beans

  • Oh my, that asparagus, snap pea and avocado pasta looks so good. Admittedly, I am not much of a cook (stir fried veggies + quinoa is my one and only specialty), but all of these are making my mouth water.

  • oh courtney, it was soooo delicious! and incredibly easy, it took no time at all! i added a few tablespoons of nutritional yeast to give it a creamy, cheesy kind of sauce. it’s a new favorite for sure! p.s. stir fried veggies and quinoa is one of my favorites! :)

  • Oh Bonnie! I love your dinner ideas. These look soooo good (I can say that every week I think). I’m especially interested in the healing stew (awe!) and orzo + snap pea salad. Mmm…

    See this is what I love about you- you don’t have a lot but you do great things with what you have! You’re able to eat well and be within your budget. That’s inspiring! :)
