dinner ideashappy friday, roosters! time for one of my favorite posts, dinner ideas! :) i’ve been cooking at my mom’s this week (we’re visiting family in north carolina!) and wanted to make some oldy goldies as well as a few new things. our favorite? the glow kale salad.

monday: glow kale salad with GF vegan walnut chip brownies for dessert
tuesday:  grilled veggies with miso served with leftover kale salad
wednesday: tomato basil cream pasta
thursday: kale chips, roasted cauliflower and baked sweet potatoes
friday: white bean and veggie stew served with my favorite carrot salad

we follow a whole foods, plant based diet. the dinner ideas posts are a way for me to log our dinners, how we make eating this way easy, and hopefully inspire you to try some new things as well. they are always meat free, dairy free and often gluten free. you can follow the posts here, and i encourage you to share your favorite recipes with us as well!

    I tried kale chips a while back when my younger sister made some. Hers came out a little too brittle and salty, but I think I might try making some soon.

  • Hi Bonnie, I have been contemplating becoming a vegan for a while and love your weekly recipe updates, I was wondering whether you may be able to give us some examples of what you also have for Breakfast/Lunch? Any inspiration would be great!

    • hi clare! sure thing! we do so many different things, but i’ll just throw out a few ideas.

      breakfast ideas:
      -waffles and pancakes
      -potato hash
      – tofu scramble (think egg scramble, just sub tofu)
      – cereal or oatmeal
      – vegan muffins

      for lunch:
      – coconut yogurt (dairy free, of course)
      – avocado and veggie sandwiches
      – smoothies
      – brown rice bowls
      – salads
