vegan dinner ideas

this week, mr. roost came down with a bad case of bronchitis and unfortunately, i believe i’m starting to get it as well (boo). so at the beginning of the week, i made a big batch of no chicken noodle soup and just made small dishes to go along with it each night. this nutritious broth based soup really does work wonders!

monday: no chicken noodle soup
tuesday: tomato basil polenta stacks
wednesday: polenta pizza
thursday: quick asparagus pasta
friday: vegan tuna salad wraps

we follow a whole foods, plant based diet. the dinner ideas posts are a way for me to log our dinners, how we make eating this way easy, and hopefully inspire you to try some new things as well. they are always meat free, dairy free and often gluten free. you can follow the posts here, and i encourage you to share your favorite recipes with us as well!

  • Ooooh, I love polenta! I had it for the first time about a month ago when my husband, my in-laws and I had a little Christmas getaway in the Adirondacks. The cottage we stayed in offered vegan brunch in their main lodge, and on our last morning there, they served us polenta, roasted red peppers and vegan sausage patties in a beautiful stack and drizzled with a balsamic reduction.     And yet I have never cooked polenta! I need to. This will be my opportunity. Looks DELICIOUS, Bonnie! :)

    question for you – I have pulled a few new recipes lately that, like your no chicken noodle soup link, call for nutritional yeast. I don’t know anything about it…I know I can look it up and will, but I’d love to know: what can you tell me about it?

  • Jes – I’ve been experimenting with and enjoying nutritional yeast for years. It’s one of my favorite things to cook with! I stumbled on this great blog post the other day over at Delighted Momma… I think you’ll like it and find it helpful!

    I also add nutritional yeast (also called “nooch”, for short) to tomato sauce to make it cheesy! It’s AWESOME! :) <3

  • hey jes! i 2nd jen- nooch is amazing! :) it’s really healthy for you and an excellent source of b vitamins. it has a nutty/cheesy smell and taste to it, and i use it in almost everything. it’s especially great for making ‘cheesy’ dishes, as it tends to sort of melt and make things really creamy. i make a killer vegan alfredo sauce with it and also top things like lasagna with it. i think you’ll love it! xox
