as i’m still winding down from the holidays, i won’t be starting our weekly dinner ideas again until next week. in the meantime, i wanted to share with you my absolute favorite new recipe (like, i’ve made it 3 times in the last week). spicy tofu scramble with roasted red peppers from nancy, the talented vegan cook over at wolf and willow!
it’s the most perfect scramble i’ve ever made, and i’ve been looking for a good recipe for a very long time. seasoned to perfection and paired with roasted red peppers, tomatoes and greens it’s like my dream come true in a bowl. slightly crunchy with a ‘cheesy’ flavor (from the nutritional yeast) it’s delightful, surprising and healthy to boot- what more could you ask for?! head on over to wolf and willow for the recipe!
