happy friday, sweet potatoes! this week, our csa box included: snap peas, fava beans, cabbage, strawberries, spinach, parsley, leeks, lettuce and rainbow chard. yum! you’ll find these ingredients intermingled in this week’s food adventures. hint: that’s probably what’s in season near you as well, so be looking for these items at your store or farmers market- they’ll have traveled less distance to get to you!

monday: leftover husband’s healing stew with orange wasabi fries
tuesday: black eyed pea burgers with an avocado & strawberry salad
wednesday
: grilled tofu with ratatouille veggies
thursday:
root veggie chowder with collard ribbons
friday:
snap peas with cucumber and ginger with vegan brownies for dessert!

happy friday, y’all! this week we got our very first csa box of the year -yaaahooooo! inside we found: snap peas, fava beans, cabbage, collard greens, strawberries, spinach, parsley, leeks, lettuce and broccoli. so that, my dears, are what you’ll find in this weeks recipes! hint: that’s probably what’s in season near you as well, so be looking for these items at your store or farmers market- they’ll have traveled less distance to get to you!

monday: husband’s healing stew (to help mend his collarbone!)
tuesday:  grilled veggie kabobs and a big ‘ol salad
wednesday: asparagus, snap pea and avocado pasta (leave off the parm!)
thursday: spinach spanakopita (our favorite this week!)
friday: orzo and snap pea salad with grilled fava beans

happy friday, sweet potatoes! my stomach is growling as i right this post (as usual). i’m still cooking at my mom’s this week (we return to california in a few days!) and am cooking what’s both in season and easiest to find. our favorite this week? probably this braised cabbage dish (we used field roast’s apple sage sausage- yum!).

monday: moroccan pizza served with a spinach salad
tuesday: butternut squash and walnut pasta
wednesday: braised cabbage with apple sage sausage served with cornbread and kale chips
thursday: lemony basil cashew pesto served with warm butternut chickpea salad
friday: veggie burgers with sweet potato fries and a seasonal salad

dinner ideashappy friday, roosters! time for one of my favorite posts, dinner ideas! :) i’ve been cooking at my mom’s this week (we’re visiting family in north carolina!) and wanted to make some oldy goldies as well as a few new things. our favorite? the glow kale salad.

monday: glow kale salad with GF vegan walnut chip brownies for dessert
tuesday:  grilled veggies with miso served with leftover kale salad
wednesday: tomato basil cream pasta
thursday: kale chips, roasted cauliflower and baked sweet potatoes
friday: white bean and veggie stew served with my favorite carrot salad

happy friday, lovelies! we’ve been traveling a lot lately, so dinners have had to be quick, wholesome and hearty. the veggies that are ready for pickin’ here in north carolina are a little different than what i’m used to in california, so i’ve adjusted a few of the recipes to accommodate the local veggies. all of these recipes make ‘throwing’ in whatever is in season easy!

monday: black rice stir fry served with a carrot and avocado salad
tuesday: lentil and bulgur soup
wednesday: roasted tomato, basil and onion pesto pizza (used a gluten free crust!)
thursday: vegetable rataouille
friday: bow ties with broccoli pesto served with a salad topped with nuts, fruit and avocado

happy friday, friends! i have to say, this week’s meals were super scrummy and wholesome! my favorite was probably the grilled portobello burgers, which got me in the mood for warm weather and eating outside. what was your favorite meal this week?

monday: stir fry vegetable pizza with warm butternut and chickpea salad
tuesday: vegan thai curry vegetables served with a carrot salad
wednesday: vegan lentil and walnut loaf served with sauteed kale and sweet potatoes
thursday: grilled portobello burgers with vegan chipotle mayo
friday: coconut rice with lemon agave stir fry and fresh seasonal salad

dinner ideasi’ve been cooking with a lot of color lately, and love that tender spring veggies are starting to emerge. asparagus, broccoli, cabbage and fresh tomatoes adorned our plates this week and made for some light and refreshing meals. my favorite was probably the black rice stir fry, plus it makes for such a beautiful plate! what was yours?

monday: broccoli spinach soup with avocado toasts (i used veggie stock and omitted the parmesan)
tuesday: vegan tortilla soup served with polenta
wednesday: vegan macaroni salad
thursday: old by tofu cakes (image via vegan dad)
friday: black rice stir fry topped with avocado

dinner ideastime for my favorite post of the week- dinner ideas! this is what you would have found on your plates had you dined with us this week. my favorite recipe was most definitely the vegan lentil loaf- it was amazing! what was yours?

monday: butternut squash and red onion pasta served with homemade whole wheat bread
tuesday: warm butternut chickpea salad served with tomato fennel soup
wednesday: pumpkin, cashew and coconut curry served with brown rice
thursday: vegan lentil and walnut loaf served with sauteed kale and sweet potatoes
friday: black bean and butternut squash burritos- i served this ‘naked’ (no tortilla) over polenta, topped with avocado
