vegan dinner ideas

after being out of town for a week, i was happy to get back in the kitchen cooking. it’s therapeutic for me, and i love thinking of and putting together meals. this week’s recipes were amazing, full of flavor and really satisfying. i hope you’ll try a few!

monday: polenta cakes with veggie ragout
tuesday: vegan grilled cheese with smoky tomato soup (yup, you heard me!!)
wednesday: veggie casserole with tofu topping
thursday: broccoli pesto with roasted red pepper pasta
friday: yummy yoga pot

vegan dinner ideas

since there’s not a whole lot in season right now, carrots, potatoes and bok choy seem to be the star in most of our meals. nicely paired with soups and stir fries, we’ve really been enjoying their rooty tones and having lots of dark green salads to go with them.

monday: yam and carrot coconut milk soup
tuesday: spaghetti with cauliflower, green olives and almonds (sans the cheese)
wednesday: creamy potato leek soup (i used vegan butter & sour cream)
thursday: bok choy skillet
friday: spciy scramble with roasted red peppers

vegan dinner ideaswith chilly nights in full swing, we’ve been craving warm dishes that soothe the soul. that means most of our meals this week were served in a bowl!

monday: healing cabbage, potato, carrot, & tomato curry stew
tuesday: we had rising moon organics frozen butternut squash ravioli this night, it was so yummy! (photo credit)
wednesday: no chicken noodle soup
thursday: butternut squash and walnut pasta (i used brown rice pasta this time)
friday: vegan mutter panner

plant based dinner ideas

after too much traveling, unpacking and 3 thanksgiving meals, i have been more than ready to get back to our dinner routine. this is the first week that i’ve been able to cook in our new home, and it’s felt really good to get back in the kitchen. the local produce here is nothing compared to what we’re used to, but we’re making do with a little health food store and the local farm’s produce. in season here we have brussel sprouts, apples, winter greens, green beans and potatoes.

monday: white bean and vegetable stew served with roasted asparagus and a salad
tuesday: celebration roast pasty with a cranberry chutney served with sauteed kale and a salad
wednesday: simple vegetable curry
thursday: breakfast polenta with apple sage sausage, onion and peppers (also referred to this recipe)
friday: fragrant pho noodle bowl

vegan dinner ideas

with cooler weather and darker evenings, our meals have also changed. they’ve become heartier, warmer and as my husband would say, soup-ier. i wait just about all year to have a good excuse to make soup, so when the opportunity arrives i take it and run with it!

monday: vegetable wellington redux served with a salad and sweet potatoes
tuesday: sumptuous shepherd’s stew (yum!)
wednesday: butternut bliss fall salad (we subbed tempeh for the tofu)
thursday: golden trio chipotle fall soup served with toasted bread topped with avocado
friday: kitsune soba served with steamed veggies

happy friday, friends! it’s been getting really chilly here at night- perfect for cozy meals and lots of soup.

monday: split pea, fennel and spinach soup served with roasted sweet potatoes
tuesday: cozy millet bowl with mushroom gravy and kale served with a hearty salad
wednesday: farro and roasted cauliflower salad served with leftover split pea soup. :)
thursday: white bean and vegetable stew served with warm butternut squash & chickpea salad
friday: pan fried tofu, kale and stir fried noodles yum!

this is what we’ve been chompin’ on this week- oh, how i love pumpkin and fig season!

monday: roasted butternut squash, apple, and farro chowder
tuesday:  “cheezy” loaded baked potato and broccoli soup
wednesday: tempeh lettuce wraps served with sweet potatoes and sauteed rainbow chard
thursday: citrus & fig risotto for breakfast and creamy mushroom soup for dinner
friday: vegan pumpkin soup with a hearty salad and baked potato

hi friends! in our town, we’re bursting at the seams with pumpkins, onions, rainbow chard, tomatoes, figs, apples and squash- all of which made an appearance somehow this week in our meals! what’s local in your town?

monday: yummy vegan gluten free pizza served with this warm butternut and chickpea salad
tuesday: vegan jambalya with sauteed rainbow chard
wednesday: vegan “chicken” noodle soup (i used tofu instead of tvp)
thursday: stir fried shiitake mushrooms with tofu and bok choy
friday: lentil walnut apple loaf with sweet potatoes and sauteed rainbow chard
