dinner ideas happy friday, roosters! time for one of my favorite posts, dinner ideas! :) i’ve been cooking at my mom’s this week (we’re visiting family in north carolina!) and wanted to make some oldy goldies as well as a few new things. our favorite? the glow kale salad.

monday: glow kale salad with GF vegan walnut chip brownies for dessert
tuesday:  grilled veggies with miso served with leftover kale salad
wednesday: tomato basil cream pasta
thursday: kale chips, roasted cauliflower and baked sweet potatoes
friday: white bean and veggie stew served with my favorite carrot salad

happy friday, friends! i have to say, this week’s meals were super scrummy and wholesome! my favorite was probably the grilled portobello burgers, which got me in the mood for warm weather and eating outside. what was your favorite meal this week?

monday: stir fry vegetable pizza with warm butternut and chickpea salad
tuesday: vegan thai curry vegetables served with a carrot salad
wednesday: vegan lentil and walnut loaf served with sauteed kale and sweet potatoes
thursday: grilled portobello burgers with vegan chipotle mayo
friday: coconut rice with lemon agave stir fry and fresh seasonal salad

dinner ideas i’ve been cooking with a lot of color lately, and love that tender spring veggies are starting to emerge. asparagus, broccoli, cabbage and fresh tomatoes adorned our plates this week and made for some light and refreshing meals. my favorite was probably the black rice stir fry, plus it makes for such a beautiful plate! what was yours?

monday: broccoli spinach soup with avocado toasts (i used veggie stock and omitted the parmesan)
tuesday: vegan tortilla soup served with polenta
wednesday: vegan macaroni salad
thursday: old by tofu cakes (image via vegan dad)
friday: black rice stir fry topped with avocado

vegan, vegetarian, gluten free

for some reason i was craving comfort food this week.. so i went with it! i mean, who says vegans can’t have meatballs with gravy?

monday: sweet chili lime tofu with wok steamed collards and quinoa
tuesday: honeyed tofu on udon with cucumber ribbons
wednesday: meatless meatballs (these are GF as well!) with gravy and mashed potatoes, served with a carrot and avocado salad
thursday: veggie fried rice (leave out the eggs!)
friday: butternut squash and red onion pasta

happy march y’all! this is one of my favorite times of year- when things begin to bloom again and soon farmers markets will be popping up around every corner!

monday: mediteranean pasta with artichockes, olives and tomatoes with a seasonal salad
tuesday: cashew coconut pumpkin curry (made with a kobacha squash- yum!)
wednesday: roasted fall veggies and lentils served with kale chips and homemade bread
thursday: vegan mac and cheese – oh yes, this happened!
friday: fennel and tomato soup – becoming a favorite! :)

for us, valentine’s day tends to be all about eating some really great food. and since there’s no better way to get to a man’s heart than through his stomach, i thought a few dinner ideas might be in need!

roasted fall veggies with lentils | butternut squash and apple soup | polenta pizzashepherd’s pie | vegan lasagna recipe

i found myself craving comfort food this week, so our meals were full of hearty-feel-good-foods. potatoes, soup and yummy polenta did the job! and don’t forget, if it wasn’t delicious and totally hubby approved, it doesn’t make the list!

monday: this new vegan lasagna recipe that is to.die.for.
tuesday: shepherd’s pie made from local fresh veggies.
wednesday: polenta pizza served with sauteed kale (yum-o!).
thursday: butternut squash and apple soup, a winter favorite!
friday: roasted fall veggies with lentils.
