vegan dinner ideas

happy friday, friends! this week, we have been eatin’ good in the neighborhood. even though we’re traveling, we’ve been able to enjoy the most amazing home cooked meals. here’s a sampling of what’s been on our plates, what about yours?

monday: pan fried tofu, kale and stir fried noodles
tuesday: simple curry veggies
wednesday: broccoli and cheeze soup
thursday: paella primavera
friday: bean and veggie sliders

hello, friends! let me just tell you- late june and july are my favorite food months. the local veggies are in full swing and some of my favorites are starting to come into season. i had my first cantaloupe this week! it was so amazing. :)

monday: creamy herbed zucchini soup from vegan family meals
tuesday: white bean and veggie stew
wednesday: grilled tofu with ratatouille vegetables
thursday: veggie shepherd’s pie
friday: grilled polenta with balsamic mushrooms (leave off the cheese to make vegan!)

hello friends! i’ve been out of town this week and eating from a sweet little cafeteria in arizona! since i haven’t been cooking, i pulled a few of my favorite dinners from the past few weeks to share with you again. if you missed them the first time, they truly are delicious, wholesome and healthy! :)

monday: vegan cobb salad in a jar!
tuesday: root veggie chowder
wednesday: black rice stir fry
thursday: tomato basil cream pasta
friday: coconut rice with lemon-agave stir fry

happy friday sweets! i have so enjoyed sharing with you this week, i hope you’ve had a great start to your june! our csa box this week included: raspberries, beets, onions, snap peas, lettuce, parsley, carrots, escarole, collard greens and zucchini. my favorite meal this week was probably the tortilla soup- topped with lots of avocado, of course! hint: be looking for these veggies at your store or farmers market- they’ll have most likely traveled less distance to get to you!

monday: black bean and butternut squash burritos (i used zucchini!)
tuesday: sweet chili lime tofu with collards and quinoa
wednesday: squash and red onion pasta (i subbed more zucchini)
thursday: vegan tortilla soup served with polenta
friday: personal veggie pot pies with roasted sweet potatoes and tuscan kale chips

vegan dinner ideas

hello, sweet potatoes! this week, our csa box included: raspberries, beets, snap peas, lettuce, parsley, carrots, onions, rainbow chard, strawberries and escarole. i’ve been making spanakopita so much that i don’t think you’ll be seeing that on our menu again for a while (though it is so yummy!). my favorite this week was probably the grilled salad.. who knew grilled lettuce tasted so good?! hint: be looking for these veggies at your store or farmers market- they’ll have most likely traveled less distance to get to you!

monday: grilled romaine salad with veggies and berry cobbler
tuesday: spinach spanakopita with roasted carrots (triangle style)
wednesday
: grilled veggie kabobs with birthday cake (& more birthday cake)
thursday:
stir fry rice noodles with tofu and veggies
friday:
coconut rice with lemon agave stir fry

hello, sweet peas! this week, our csa box included: beets, snap peas, lettuce, parsley, carrots, leeks, kale, rainbow chard, strawberries and spinach. boy, do i love spring veggies! we had somewhat of a light menu this week, but definately found a few new favorites. hint: be looking for these veggies at your store or farmers market- they’ll have most likely traveled less distance to get to you!

monday: lemon dill tofu with jewel toned pancakes
tuesday: spinach spanakopita with roasted carrots (triangle style)
wednesday
: lentil walnut loaf with roasted asparagus and grilled peppers
thursday:
layered eggplant and zucchini casserole
friday:
collard green enchiladas

happy friday, y’all! this week we got our very first csa box of the year -yaaahooooo! inside we found: snap peas, fava beans, cabbage, collard greens, strawberries, spinach, parsley, leeks, lettuce and broccoli. so that, my dears, are what you’ll find in this weeks recipes! hint: that’s probably what’s in season near you as well, so be looking for these items at your store or farmers market- they’ll have traveled less distance to get to you!

monday: husband’s healing stew (to help mend his collarbone!)
tuesday:  grilled veggie kabobs and a big ‘ol salad
wednesday: asparagus, snap pea and avocado pasta (leave off the parm!)
thursday: spinach spanakopita (our favorite this week!)
friday: orzo and snap pea salad with grilled fava beans
