lemon poppy seeds

The Lemon Poppy Seed smoothie was a fresh idea I had this weekend after having a “Chocolate Cake Shake” from a local restaurant. The Chocolate Cake Shake is simple: it’s just a slice of frosted cake blended into a milk shake. I started to think about using my favorite dessert: lemon poppy seed muffins. As you can imagine this isn’t the healthiest of ideas, so I went for a smoothie option, which allows for lighter ingredients.

ingredients

- 1 cup of ice, crushed

- 8 ounces of lemon yogurt

- juice of 1/2 a lemon

- 1/3 cup light vanilla soy milk

- 1 tablespoon lemon zest

- 1 tablespoon poppy seeds

- 1 tablespoon sugar – optional if you prefer a tart drink

yields one smoothie

directions

Place 1 cup of ice in a blender; crush. Add in yogurt, and blend for 10 seconds. Add soy milk, lemon juice, lemon zest, poppy seeds, and optional sugar. Blend for about 30 seconds or until smooth.

spring flowers & lemonade

even though it was pouring snow on monday, the high today is 72 and i’m simply sprung about spring!  yes, enough to where i even made some hand squeezed lemonade, yum.

recipe:

1 cup of lemon juice

1 cup of sugar (i put a dash more, i like mine sweet!)

the squeeze of one lime

6 cups of cool water

stir until the sugar has dissolved, kick back, and relax!

today was also the first day that i was able to pick flowers from my yard, a splash of homegrown yellow goes a long way!
