happy friday, friends! here a few of the yummy meals that nourished us this week. they were all delicious, but our favorite was probably this summer vegetable curry. i served it with forbidden rice and fresh avocado. yum!

happy friday, friends! it’s still pretty early in the season for colorful veggies, so we’ve been eating a lot of green lately. asparagus, broccoli, spinach, kale and LOTS of lettuce. a salad at every meal! here’s what we’ve had this week:

monday: miso sesame squash
tuesday: quinoa crusted tempeh over lettuce
wednesday:  cauliflower risotto
thursday: powerful pesto plate yum!
friday: grilled asparagus and creamy lemon quinoa

this week’s list of meals are a little shorter than usual as we ended up eating out one night and devouring leftovers another night. the three meals we cooked though were amazing, i hope you’ll try one!

plant based dinner ideas

a couple of our meals were so good last week, that they ended up back on our plates this week! we started mixing in a few spring veggies to our meals as well and they have been so delicious. i’m in no hurry to say goodbye to butternut squash and winter kale though. :)

monday: simple tomato soup
tuesday: chala masala
wednesday: green powerhouse pesto plate
thursday: baked farro with butternut squash
friday: red pepper rapini with white beans and grits (sans the egg and served with tavorite tofu instead)

this week’s meals have been both delicious and superbly nourishing. cold weather hit again, so i immediately jumped back in to making soups and using hearty grains like farro and millet. isn’t it funny how our food and cravings change with the weather? it’s tough to say, but our favorites would probably have to be the miso tahini soup and baked farro with butternut squash. yum yum!

wednesday: 9 vegetable hot & sour soup

i love all the pops of purple and green that appeared on our plates this week. a couple of warm days (we’re talking 75°+ here!) got me in the mood to eat some spring greens and start planning our garden this year. i can hardly wait!

plant based dinner ideas

oh, happy friday friends! we’ve been eating tons of seasonal root veggies and beans over here (though we cheated a little this week with some fresh tomatoes). i just got word from our local csa that they’ll be starting up again soon. i’m so looking forward to spring vegetables, but will try to soak up the last few weeks of winter roots as much as possible!

monday: tomato cobbler, made with my favorite biscuit recipe
tuesday: whole roasted and spiced cauliflower (sans the sauce)
wednesday: vegetarian ‘chicky’ parm (i subbed daiyga cheese and used a flax egg to make this vegan!)
thursday: chana masala with jasmine rice
friday: root vegetable hash – yum!

favorite green smoothie

i pretty much drink a smoothie every day. with my favorite handheld blender, they’re so easy to make! i just pile my ingredients into a glass, hit it with the blender and slurp away. i can sip on one for most of an afternoon, in between hopping around with bear and trying to get some work done. each smoothie is usually a little different, but today i’m sharing with you my favorite green smoothie.

kale & mango green smoothie

ingredients:

– 1 kale leaf
– 1/2 cup mango (frozen or fresh)
– 1/2 cup unsweetened vanilla cultured coconut milk
– 2 tablespoons chia seeds
– 1/2 banana
– 1 cup almond milk (or just enough to slightly cover the ingredients)
– dash of cinnamon or cinnamon flax seed oil

directions: blend and be well!

side note! speaking of so delicious, we also recently tried their new organic coconut milk fudge bars. they are OH-mazing! 80 calories a bar means i get to have one every night. :)
