plant based dinner ideas happy friday, loves! we’re still eating lots of cauliflower, cabbage and potatoes but i’m not complaining. it’s these winter vegetables that sustain us and make winter so savory. our favorite meal this week was this delicious shaved cauliflower salad.

monday: cauliflower buffalo bites (um, yum!)
tuesday: thai noodle soup
wednesday:  jumbo stuffed shells
thursday: shepherd’s pie
friday: shaved cauliflower salad

plant based dinner ideas happy friday, loves! for some reason, our meals this week were extra yummy. they were full of warming spices and winter veggies. our favorite by far was the whole roasted cauliflower, you must try it!

monday: cauliflower risotto
tuesday: bloomin’ indian spiced whole roasted cauliflower. yum!
wednesday:  red thai curry sauce (i left out the fish sauce)
thursday: roasted ratatouille with polenta
friday: leftover night! :)

plant based dinner ideas happy friday, lovelies! most of our meals this week were perfect for winter weather. full of warm spices and hearty ingredients. our favorite by far was the big yoga bowl. it’s so simple, though i had never thought about layering ingredients this way. i added kale and roasted red peppers, and it was fresh, filling and fun to eat. i’m already planning for another version, where i think i’ll add some roasted beets and turnips to the mix.

monday: southwestern breakfast hash (for dinner!)
tuesday: pumpkin curry with chickpeas
wednesday:  homemade falafel with leftover curry
thursday: the big vegan bowl
friday: yummy yoga pot

plant based dinner ideas 1.10.14 it’s just plain cold here. so, we’ve been eating lots of soups to warm us up from the inside out! with few veggies in season right now, our meals have also consisted of a lot of beans, kale and cabbage (not complaining!). here are the meals we’ve enjoyed this week!

monday: vegan chili with cornbread
tuesday: white bean vegetable stew (+ leftover cornbread)
wednesday:  creamy tuscan white bean soup topped with veggie sausage
thursday: the big vegan bowl (yum!)
friday: spaghetti and no meatballs

it’s december! it’s december! this month’s calendar was inspired by cooler weather and our beautiful smoky mountain pine trees. i wanted to use some teals and a little lime green this month, instead of the traditional christmas green and red. i think they turned out looking very ski-lodge-winter-cabin-y! i hope they will make you feel cozy and snug. :) xo, bonnie

vegan dinner ideas

pomegranate season is upon us which means i’m throwing pomegranate seeds all over the place (especially after i finally figured out how to de-seed them!). our favorite meal by far this week was this most delicious pomegranate, kale and wild rice salad with walnuts by pinch of yum. i left off the feta and replaced it with some tempeh croutons which made it a light and refreshing yet filling dinner for us. also on our menu this week was a thai red curry (something i just through together) and pumpkin mole. tonight, i’m planning on making this creamy tuscan white bean soup. it’s getting chilly over here! perfect soup weather. :)

happy world vegan day!

happy world vegan day, friends! i spotted two recipes this week around the blogosphere that i can’t wait to make. the first is for baked carrot cake oatmeal and comes from one of my favorite food blogs, green kitchen stories. it calls for all of fall’s best flavors and gets finished with a crunchy top layer of maple syrup, coconut oil, walnuts and sunflower seeds. yes, please!

the next recipe from sprouted kitchen is a delicious chili roasted tofu dish with minted pomegranate relish and avocado. i’ve been eying the fresh pomegranates at our market lately and have been waiting for the right recipe to use them in. i think i’ve finally found it!
