vegan dinner ideaswith chilly nights in full swing, we’ve been craving warm dishes that soothe the soul. that means most of our meals this week were served in a bowl!

monday: healing cabbage, potato, carrot, & tomato curry stew
tuesday: we had rising moon organics frozen butternut squash ravioli this night, it was so yummy! (photo credit)
wednesday: no chicken noodle soup
thursday: butternut squash and walnut pasta (i used brown rice pasta this time)
friday: vegan mutter panner

plant based dinner ideas

after too much traveling, unpacking and 3 thanksgiving meals, i have been more than ready to get back to our dinner routine. this is the first week that i’ve been able to cook in our new home, and it’s felt really good to get back in the kitchen. the local produce here is nothing compared to what we’re used to, but we’re making do with a little health food store and the local farm’s produce. in season here we have brussel sprouts, apples, winter greens, green beans and potatoes.

monday: white bean and vegetable stew served with roasted asparagus and a salad
tuesday: celebration roast pasty with a cranberry chutney served with sauteed kale and a salad
wednesday: simple vegetable curry
thursday: breakfast polenta with apple sage sausage, onion and peppers (also referred to this recipe)
friday: fragrant pho noodle bowl

a plant based thanksgiving feast

instead of sharing regular dinner ideas with you today, i’m excited to talk about serving a plant based thanksgiving meal. eight years ago when i told my family i was going to be a vegetarian the first question that asked was,”but what will you eat for thanksgiving?!”.well, we’ve all come a long way since then, but it’s still one of the most frequent comments i hear. since then, we’ve had years of delicious thanksgiving meals, sans the turkey, cheese and heavy cream.

years ago i heard someone talking about how many americans were emotionally attached to meat. hotdogs at ball games, hamburgers at cookouts, turkey at thanksgiving. for some reason, it struck me as odd. even kind of gross. i mean, i didn’t want to be emotionally attached to meat! i know there are lots of different feelings, beliefs and emotions surrounding food so my intention here is not to change or upset anyone, only to share with you the way we do things, why we do it and how it makes us feel.

so this year, you won’t find any turkey on our table, but instead a wholesome and hearty feast of plant based courses. they will leave us feeling fully satisfied, but not ‘over done’ and there will be no need to diet afterwards. we’ll be energized after our meal, instead of exhausted and in need of a nap!

below are several scrumptious thanksgiving courses, many are tried and true favorites around our household.

main course: this is the trickiest course to fix vegan and still make people feel like they had a filling fall feast. it’s easy though with these recipes!

- vegetable wellington redux (sans the goat cheese). this is a decadent course that truly feels like a special!

- ultimate vegan lentil loaf – a tried and true favorite!

- seitan roulade - from one of my favorite food bloggers, vegan yumyum.

- celebration roast – the ultimate in vegan sophistication, this roast is simple and delicious (just heat it up!)

side dishes: it’s easy enough to prepare veggies for side dishes, but the trick to thanksgiving is using seasonal spices & ingredients that makes the meal feel really special.

- mushroom gravy – the perfect gravy to go with biscuits, potatoes or veggie loaf.

- garlic mashed potatoes – with ingredients like rosemary and lentils, this is sure to be a hit!

- cornmeal ‘buttermilk’ biscuits - i promise no one will miss the buttermilk!

- roasted fingerling potatoes and brussel sprouts (brussel sprouts are my favorite).

- herbed creamed collards with sage and coconut milk.yum!

- herb spiced stuffing – i like to add apple sage field roast to my stuffing, too.

dessert: the best part of all!

- baked apples stuffed with cinnamon date pecan oatmeal

- vegan pumpkin pie – i like to make the gluten free one, it’s so yummy!

- coconut ice cream - my favorite plant based ice cream (doesn’t taste like coconut!).

with cooler weather and darker evenings, our meals have also changed. they’ve become heartier, warmer and as my husband would say, soup-ier. i wait just about all year to have a good excuse to make soup, so when the opportunity arrives i take it and run with it!

monday: vegetable wellington redux served with a salad and sweet potatoes
tuesday: sumptuous shepherd’s stew (yum!)
wednesday: butternut bliss fall salad (we subbed tempeh for the tofu)
thursday: golden trio chipotle fall soup served with toasted bread topped with avocado
friday: kitsune soba served with steamed veggies

happy friday, friends! it’s been getting really chilly here at night- perfect for cozy meals and lots of soup.

monday: split pea, fennel and spinach soup served with roasted sweet potatoes
tuesday: cozy millet bowl with mushroom gravy and kale served with a hearty salad
wednesday: farro and roasted cauliflower salad served with leftover split pea soup. :)
thursday: white bean and vegetable stew served with warm butternut squash & chickpea salad
friday: pan fried tofu, kale and stir fried noodles yum!

rosemary cashew stuffed figs

hey friends! i’m so excited that it’s finally fig season and i wanted to share with you my all time favorite fig recipe. i posted this recipe last year around this same time, and it is still one of my all time favorite recipes. i’ve been waiting all year to make them again! hope you enjoy. :)

rosemary cashew stuffed figs

oh my you guys, i have a new favorite recipe!! our neighbor has three beautiful fig trees and so many figs that they ask us to come over and pick them any time we like (thank you!!). i knew we liked figs, but i really haven’t ever cooked with them very much.. until this year, that is! i’ve eaten them plain, made fig pizza, added them to a squash roast and more, but now i have finally found the fig recipe that will stick with me forever. these rosemary stuffed figs (adapted from a recipe in color me vegan) make for the perfect appetizer and are deliciously balanced with sweet and salty. (*hint! you can make this feeling a few days ahead of time, which makes getting this dish in the oven a cinch).

ingredients

- 12 figs
- 1 cup raw cashews
- ½ yellow onion, finely chopped
- 1 tbs olive oil
- 1 tsp miso paste
- 1 tbs lemon juice
- ¼ cup raw walnuts
- 1 tbs nutritional yeast
- 1 tbs fresh rosemary, chopped
- salt and pepper, to taste
- rosemary sprigs, for garnish

directions:

1) soak the cashews in water overnight (or for at least 6 hours). drain and rinse.

2) preheat oven to 450°F. sauté the chopped onion in the olive oil over medium heat until translucent (5-7 minutes).

3) place the soaked cashews, sautéed onion, miso, lemon juice, and 1 tbs of water in a blender and process until smooth. add the walnuts, nutritional yeast, and rosemary into the cashew mixture and blend until very smooth. season with salt and pepper.

4) take each fig and barely slice the bottom as to help them sit up straight in a pan. then, make a small cut crosswise across the top of each fig, making sure not to cut them all the way in half- you just want to ‘open’ them up enough to pipe filling in the middle.

5) spoon cashew mixture into a ziplock back and seal. snip the end of one corner to make yourself a piping bag. fill the cavity of each fig and place on a lightly greased baking pan.

6) brush or lightly spray the figs with a little oil, and roast for about 12 minutes or until the figs are soft. garnish with rosemary and serve!

monday: roasted butternut squash, apple, and farro chowder
tuesday:  “cheezy” loaded baked potato and broccoli soup
wednesday: tempeh lettuce wraps served with sweet potatoes and sauteed rainbow chard
thursday: citrus & fig risotto for breakfast and creamy mushroom soup for dinner
friday: vegan pumpkin soup with a hearty salad and baked potato

hi friends! in our town, we’re bursting at the seams with pumpkins, onions, rainbow chard, tomatoes, figs, apples and squash- all of which made an appearance somehow this week in our meals! what’s local in your town?

monday: yummy vegan gluten free pizza served with this warm butternut and chickpea salad
tuesday: vegan jambalya with sauteed rainbow chard
wednesday: vegan “chicken” noodle soup (i used tofu instead of tvp)
thursday: stir fried shiitake mushrooms with tofu and bok choy
friday: lentil walnut apple loaf with sweet potatoes and sauteed rainbow chard
