plant based dinner ideas (7) glazed lentil walnut apple loaf. meat lovers rejoice! this veganized version of meatloaf won’t leave you missing anything, accept leftovers. i’ve probably made it a dozen times and it’s always a huge hit. it’s also the perfect comfort food for this time of year, as it bursts with all the flavors of fall. i usually serve it with whatever sides i have on hand, which usually consists of mashed potatoes, roasted carrots and some kind of sauteed green.

plant based dinner ideas (4) THIS recipe is amazing. vegetables wellington redux is so scrumptious and rich that i usually only make for special occasions, and every time it’s an ultimate treat. i make it vegan by omitting the goat cheese (you’ll never miss it!) and skipping the egg wash on the outside, and it still turns out beautifully browned and crusty every time. i usually also make my own pesto (since it can be difficult to find one with no cheese) by blending fresh basil, pine nuts, garlic and olive oil together. and because i find that it’s perfect on it’s own, i’ve also never served it with tomato sauce. trust me, make this and you won’t regret it!

plant based dinner ideas (3) another one of my favorite go-to soup recipes is this roasted tomato and rosemary soup with kale and potatoes. it’s easy to throw together and especially hardy and warming on cool autumn nights. i most often serve it with homemade bread and slathered with (vegan) butter. yum!

vegan dinner ideas

this week’s csa box delivered a bundle of tomatoes, green beans, carrots, potatoes, sweet onions, beets, cabbage, eggplant, green peppers, yellow squash and basil- all of which i’ve incorporated into our yummy meals this week! i just love summer produce, don’t you?

monday: 3 carrot soup served with cornbread and a beet salad
tuesday: leftover carrot soup served with my favorite biscuits
wednesday:  simple dinner on the grill: tofu & mixed veggies
thursday:  vegan pasta carbonara topped with fresh avocado
friday: summer vegetable curry (yum!)

vegan dinner ideas

summery fresh is how i would sum up this week’s meals. we’ve really been enjoying cooking and eating out of our weekly csa box, and have grilled out a few times as well. in season here are carrots, zucchini, squash, onions, red potatoes, basil, cabbage, bell peppers and watermelon. yum!

monday: vegan mac & cheese served with sauteed kale and baked tofu
tuesday: vegan WOW burger served with roasted brussel sprouts and leftover mac & cheese.
wednesday: roasted carrots, baked potatoes and sauteed kale + a salad topped with roasted beets
thursday: vegan polenta pizza*
friday: black bean burritos (i subbed zucchini for the butternut squash!)

*i love making polenta pizza! simply make some polenta and spread it out in a circle to use as your crust on a lightly greased baking sheet (or pizza pan). let it sit until it’s firmed up and cooled down. top with fresh tomatoes, sauteed squash & onions, vegan cheese (i used follow your heart’s vegan gourmet mozzarella) and fresh basil. bake until cheese is melted and slightly browned. enjoy!

vegan dinner ideas

this week’s meals were full of summer flavors and bold ingredients. some were super healthy, others were simply comforting. so far, they’ve been so yummy i can’t pick a favorite! i’m especially looking forward to making this avocado soup tonight, though. :)

monday: a yummy yoga pot
tuesday: fake out mac-n-cheese served with sauteed kale
wednesday: vegan pesto pizzas served with a spinach salad
thursday: lentil walnut apple loaf with sauteed cabbage
friday: avocado soup served with homemade bread and a warm quinoa salad.

plant based dinner ideas

after being gone for so long to colorado, it sure does feel good to get back home and in the kitchen! last week we had a lot of ‘bowl meals’, you know sautés and pastas that can just be tossed in a bowl and enjoyed on the couch. i think my favorite with this creamy avocado barley risotto that i served with sautéed veggies and homemade biscuits.

monday: satay noodle salad
tuesday: toasted quinoa with mushrooms
wednesday: creamy avocado barley
thursday: sweet potato burgers
friday: mushroom kale rice bowl

monday: hearty yam & white bean hash
tuesday: my favorite simple tomato soup with strawberry rhubarb crumble for dessert!*
wednesday: leftovers!
thursday: polenta pizza served with a seasonal salad
friday: yoga pot (our favorite meal this week!)

*this strawberry rhubarb crumble is one of my favorite desserts to make. i simply sub in earth balance butter to make it vegan. i’ve also made it gluten free by using an all purpose gf flour and it works perfectly! sub in your favorite fruits and get creative, it’s very flexible!
