glazed lentil walnut apple loaf. meat lovers rejoice! this veganized version of meatloaf won’t leave you missing anything, accept leftovers. i’ve probably made it a dozen times and it’s always a huge hit. it’s also the perfect comfort food for this time of year, as it bursts with all the flavors of fall. i usually serve it with whatever sides i have on hand, which usually consists of mashed potatoes, roasted carrots and some kind of sauteed green.
